- Wood Ear Mushroom (Auricularia polytricha), also known as Judas Ear, is valued in Asian cuisine as "Mu-Err." After drying, this mushroom can return to its original shape by adding liquid and is ideal for soups and stews. It is cultivated on a special wood substrate.
