The Coprinus mushroom, also known as asparagus mushroom, porcelain ink cap, or shaggy ink cap, belongs to the family of agaric mushrooms and is widespread throughout Europe in forests and meadows.
Its distinctive shape and white color make it easy to recognize and it is frequently collected. Its flesh is delicate and its aroma mild.
Harvest several times a day:
The Coprinus has a unique "self-destruction mechanism" and should therefore be consumed no later than one day after harvesting. Older specimens dissolve into an inky liquid – hence the name "shaggy ink cap".
MycoVital cultivates it on special organic straw substrate and ensures optimal conditions in modern cultivation rooms during the several-week growth phase. Since it grows very quickly, it is sometimes harvested several times a day and processed immediately. Because it requires cool temperatures, it is sustainably grown only in the winter months.
